Strawberry Chicken Salad

 Strawberry Chicken Salad is the quintessential spring salad, celebrating the sweet taste of the season with fresh strawberries and fresh-from-the-garden basil.


Yield: Makes about 7 cups

Total time: 2 Hours, 20 Minutes




1/2 cup bottled poppy-seed dressing
1/4 cup minced green onions
3 tablespoons chopped fresh basil
1/2 teaspoon freshly ground pepper
4 cups chopped cooked chicken
2 cups diced fresh strawberries
Salt to taste
1 cup chopped toasted pecans


  1. Stir together poppy-seed dressing, minced green onions, chopped fresh basil, and freshly ground pepper in a large bowl.
  2. Fold in chicken and strawberries; add salt to taste.
  3. Cover and chill 2 hours.
  4. Stir in pecans just before serving.

Strawberry Bruschetta

Usher in the warm days of spring and summer with Strawberry Bruschetta. This refreshing mixture of nectarine, grape tomatoes, strawberries, and basil are served over baguette slices with a slathering of goat cheese.


Yield: Makes 10 to 12 servings

Total time: 35 Minutes



1 1/2 cups sliced fresh strawberries
1 nectarine, diced
1 cup quartered grape tomatoes
3 tablespoons thinly sliced fresh basil
1 shallot, minced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon sugar
1 teaspoon freshly ground pepper
1/4 teaspoon salt
1 (12-oz.) French bread baguette
1 (10.5-oz.) goat cheese log, softened


  1. Preheat oven to 375°.
  2. Stir together strawberries, nectarine, grape tomatoes, basil, minced shallot, olive oil, balsamic vinegar, sugar, freshly ground pepper, and salt.
  3. Split baguette in half; cut each half crosswise into 4 equal pieces.
  4. Spread cut sides of bread with goat cheese.
  5. Place bread pieces on a baking sheet, and bake 13 to 15 minutes or until thoroughly heated.
  6. Remove from oven, and top with strawberry mixture.
  7. Cut into 2-inch slices.

Chilled Strawberry Soup

Refreshing Chilled Strawberry Soup offers a splash of excitement with the addition of Riesling. Serve this spring soup for a first course or dessert.

3 cups sliced fresh strawberries
1 cup plain Greek yogurt
1/2 cup Riesling
1/3 cup sugar

Garnishes: olive oil, freshly ground pepper, sliced fresh strawberries


  1. Process 3 cups sliced fresh strawberries, Greek yogurt, Riesling, and sugar in a blender or food processor until smooth, stopping to scrape down sides as needed.
  2. Cover and chill 2 hours.
  3. Garnish with a drizzle of olive oil, freshly ground pepper, and sliced fresh strawberries.

Strawberry Basil Frozen Yogurt

Yield: Makes about 1 qt.

Total time: 1 Hour, 50 Minutes





2 cups sliced fresh strawberries
1 cup sugar
2 tablespoons chopped fresh basil
1 teaspoon lime zest
1 cup plain Greek yogurt
1 cup whipping cream


  1. Stir together strawberries and sugar in a medium bowl.
  2. Let stand 30 minutes, stirring occasionally.
  3. Pulse strawberry mixture, basil, and lime zest in a food processor 9 to 10 times or until berries are finely chopped (almost pureed), stopping to scrape down sides as needed.
  4. Whisk together yogurt and cream in a medium bowl until smooth; stir strawberry mixture into yogurt mixture until well blended.
  5. Cover and chill 1 hour.
  6. Pour strawberry mixture into freezer container of a 1 1/2-qt. electric ice-cream maker, and freeze according to manufacturer’s instructions. (Instructions and times may vary.)
